“Quality is also influenced by the potato varieties used. Among all of them, the sour ones, such as those grown in Soria, at an altitude of more than 1,000 meters, are the most popular. And, of course, the cut, more or less fine, and the amount of salt with which they are seasoned are decisive. Some brands have reached such a level that they are exported to distant countries. No one doubts that Spain produces some of the best potato chips in the world.”
